How to Prepare Dum Biryani: A Culinary Journey to Exquisite Flavors
Dum biryani, a beloved dish in the Indian subcontinent, is a culinary masterpiece that combines aromatic spices, tender meat or vegetables, and fluffy rice in a rich, flavorful broth. Ingredients
Before you begin, gather the following ingredients:
– 1 kg basmati rice
– 500 g chicken or mutton, cut into pieces
– 2 large onions, thinly sliced
– 4 tomatoes, finely chopped
– 1 tablespoon ginger-garlic paste
– 1 teaspoon red chili powder
– 1 teaspoon turmeric powder
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– 1 teaspoon saffron threads
– 1 teaspoon salt
– 2 tablespoons oil
– 2 tablespoons ghee
– 1 teaspoon fennel seeds
– 2 bay leaves
– 4 cloves
– 4 green cardamom pods
– 2 black cardamom pods
– 1 cinnamon stick
– 2 star anise
– 1/2 cup yogurt
– Fresh mint leaves and coriander leaves for garnishing
Preparation
1. Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for at least 30 minutes.
2. In a large pot, bring 4 cups of water to a boil. Add the soaked rice, salt, and a pinch of turmeric powder. Cook the rice until it is 80% done. Drain the rice and set it aside.
3. In a separate pan, heat the oil and ghee. Add the fennel seeds, bay leaves, cloves, green cardamom pods, black cardamom pods, cinnamon stick, and star anise. Sauté the spices until they release their aroma.
4. Add the sliced onions to the pan and sauté until they turn golden brown. Add the ginger-garlic paste and sauté for another minute.
